     I have been asked to post some of the recipes from my cooking shows. Here is the first one...try it and enjoy!
       Marinated Roast Pork Tenderloin
1 whole or half boneless pork tenderloin
1 bottle of balsamic vinagrette with basil
2 tablespoons of olive oil
salt and pepper
     In a non reactive glass bowl or a gallon size ziplock bag place tenderloin and enough salad dressing to cover meat. Refrigerate for at least 4 to 8 hours.
     Remove tenderloin and reserve marinade. Salt and pepper tenderloin on all sides. In a hot pan sear the tenderloin in the olive oil until brown on all sides. Place in shallow roasting pan and roast in a pre-heated 350 degree oven for 40 to 50 minutes. Remove to cutting board and let rest for 5 to 10 minutes...slice medallions to desired thickness.
     Take reserved marinade and bring to a boil over medium heat and let reduce by a third...drizzle over medallions when ready to serve.

Simple and tasty my biker friend...even a dummy like me could do this one. I bet it would be good in the smoker too!
